Processing:
- The green tea process (kills yeast/stars to prevent oxidation) keeps the water color bright and the pure flavor typical of the highlands.
- Pink tea process, fully oxidized: wilting – light jar – oxidized – drying, amber red water coloring, deep sweetness
Flavor – Sensory:
Green tea:
- Watercolor: Light yellow to light honey yellow (depending on dosage & soaking time).
- Fragrance: Young plants, young grass, sweet honey and mountain herbs. Mild bitter taste, deep sweet aftertaste
Red tea:
- Watercolor: Amber red to bright brown red.
- Flavor: Molasses, malt, ripe fruit, light forest flowers. Mild acrid taste, sweet aftertaste
